The philosophy behind the book
The philosophy behind the book
Indian cuisine already offers a rich variety of protein-containing foods.
Thoughtful combinations of pulses, dairy, eggs, grains, vegetables, nuts and seeds can help make everyday meals more nourishing without abandoning traditional flavours.
The book changes proportions rather than cuisines: a little more moong in the batter, a bowl of curd beside the paratha, paneer folded into the upma, a measured portion of rice instead of an open-ended one.
Every recipe gives an estimate of calories, protein, carbohydrate, fat and fibre per serving. Where a dish is not especially high in protein, it says so. Sugars from jaggery, honey and dates are counted like any other sugar, and whey is always optional.
