Good source without whey; High protein with whey. Total sugars include about 15 g lactose from milk and milk powder. Values checked against IFCT 2017 on 15 Oct 2026.

Ingredients

  • 400 ml toned milk · 20 g skimmed milk powder
  • 20 g cornflour · 15 g unsweetened cocoa powder · 20 g sugar or jaggery powder
  • ½ tsp vanilla · pinch of salt
  • Optional: 30 g unflavoured or chocolate whey (15 g per serving)

Method

  1. Whisk cornflour, cocoa, milk powder, sugar and salt with 100 ml cold milk to a smooth paste.
  2. Heat the remaining milk in a heavy pan until steaming. Whisk in the paste.
  3. Cook on medium-low, whisking constantly, for 4–5 minutes until it bubbles and thickens enough to coat the back of a spoon thickly.
  4. Off the heat, stir in vanilla. If using whey, let the pudding cool for 10 minutes (to below about 60 °C), then whisk it in thoroughly — added to boiling pudding, whey turns grainy.
  5. Pour into 2 bowls, cover the surface with cling film to stop a skin forming, and chill 2 hours.

Protein optimisation

  • Milk supplies 6 g per serving, milk powder 3.5 g, cocoa 1.5 g.
  • Boost: whey as above, or top with 50 g hung curd per bowl (+3 g protein, +45 kcal).

Variations, serving and storage

  • Flavour: elaichi-chocolate — add ¼ tsp cardamom; or a pinch of chilli for a Mexican-style twist.
  • Substitution: jaggery powder for sugar (similar calories; earthier taste).
  • Storage: 3 days refrigerated.
  • Food safety: chill within 1 hour of cooking.
  • Meal prep: excellent.
