Good source. IFCT 2017 has no foxtail-millet entry; NIN's earlier values are used. Values checked against IFCT 2017 on 14 Oct 2026.
Ingredients
- 60 g whole green moong, dry, sprouted · 50 g kala chana, dry · 60 g foxtail millet
- 100 g cucumber · 60 g carrot · 60 g tomato, all diced · 15 g fresh grated coconut · 2 tbsp coriander · 1 tbsp lemon juice or 30 g grated raw mango
- 15 g roasted peanuts, crushed
- Tempering: 8 g groundnut oil · ½ tsp mustard seeds · 8 curry leaves · 1 green chilli · pinch of hing
- Dressing: 150 g curd whisked with ½ tsp roasted cumin, salt and 1 tbsp chopped mint
Method
- Soak kala chana 8 hours; pressure-cook with 300 ml water for 5 whistles until tender. Drain.
- Rinse foxtail millet; cook with 180 ml water and a pinch of salt for 2 whistles (or 15 minutes covered on low). Fluff.
- Steam the moong sprouts 5 minutes until just tender.
- Heat oil; add mustard seeds, curry leaves, chilli and hing. Toss in the sprouts and chana for 2 minutes with salt.
- In each bowl, layer millet, then the warm pulses, then vegetables and coconut. Add lemon or raw mango.
- Top with peanuts and spoon over the curd dressing just before eating.
Protein optimisation
- Moong sprouts supply 7 g per serving, kala chana 5 g, millet 3.5 g, curd 2.5 g, peanuts 2 g.
- Boost: add 50 g grilled paneer or tofu cubes per bowl (+9 g or +7.5 g protein; +130 or +75 kcal).
Variations, serving and storage
- Regional: Tamil sundal-bowl — swap the curd dressing for a sundal-style tempering with grated coconut only (dairy-free; 2.5 g less protein).
- Substitution: quinoa, brown rice or little millet in place of foxtail millet.
- Storage: components keep 3 days refrigerated, separately; assemble on the day.
- Food safety: always cook sprouts for this bowl; pack curd dressing chilled and add just before eating.
- Meal prep: excellent — the best lunch-box recipe in this chapter.
