High protein, either way. Contains caffeine (roughly 80–120 mg, depending on decoction strength) — not suitable for children, and best avoided late in the day. Values checked against IFCT 2017 on 14 Oct 2026.

Ingredients

  • 60 ml strong filter-coffee decoction (or 1½ tsp instant coffee in 30 ml hot water), cooled
  • 200 ml chilled toned milk
  • Choose one: 20 g skimmed milk powder, or 15 g unflavoured or vanilla whey
  • 4–5 ice cubes · pinch of cardamom (optional) · optional sweetener: 5 g jaggery or sugar (+20 kcal, +5 g sugar)

Method

  1. Make the decoction in a filter (2½ tbsp coffee-chicory powder with 100 ml boiling water) and let it drip for 15 minutes. Cool.
  2. Blend milk with the milk powder or whey for 15 seconds until frothy.
  3. Add decoction, ice and cardamom; blend 10 seconds.
  4. Pour into a tall glass or the traditional davara-tumbler and serve.

Protein optimisation

  • Milk supplies 6 g; milk powder 7 g or whey 12 g.
  • Boost: use both (+7 g protein, +70 kcal over the whey version).

Variations, serving and storage

  • Regional: Kumbakonam degree-coffee style — hot, with full-cream milk and no protein added.
  • Substitution: cold brew or espresso in place of decoction.
  • Storage: decoction keeps 3 days refrigerated; blend the frappé fresh.
  • Food safety: refrigerate decoction promptly.
  • Meal prep: make decoction for several days at once.
