Good source (just under 5 g per 100 kcal before rounding). Sugars are natural but high: about 15 g from chikoo and 20 g lactose from milk and milk powder, about 34 g in all. A juice-centre version with 2 tbsp sugar and a scoop of ice cream typically adds about 200 kcal and 30–35 g more sugar. Values checked against IFCT 2017 on 14 Oct 2026.
Ingredients
- 120 g ripe chikoo (sapota) flesh, peeled and seeded (2 medium)
- 250 ml chilled toned milk · 15 g skimmed milk powder (2 tbsp)
- Pinch of nutmeg or cardamom · 3–4 ice cubes
Method
- Halve the chikoos, scoop out the flesh and remove every seed (they are hard and inedible).
- Blend chikoo with milk powder and half the milk until smooth.
- Add the remaining milk, nutmeg and ice; blend 15 seconds. Serve at once — chikoo darkens quickly.
Protein optimisation
- Milk supplies 8 g, milk powder 5 g, chikoo 1 g.
- Boost: 15 g whey (+12 g protein, +60 kcal), or 50 g hung curd (+3 g protein, +45 kcal).
Variations, serving and storage
- Regional: Chikoo-dates shake — a winter version with 1 date (adds about 25 kcal and 6 g sugar).
- Substitution: ripe banana or papaya when chikoo is out of season.
- Storage: drink within 30 minutes; the colour and flavour fade.
- Food safety: use pasteurised milk; wash chikoos before cutting.
- Meal prep: not suitable.
